Effects of extraction agents on the antioxidant activity and condensability of Aronia melanocarpa polyphenol

Abstract: Since the healthy effects of polyphenols have been gradually recognized, Aronia melanocarpa, a polyphenols-rich berry, received more and more attentions. Efficient extraction of total polyphenols from this kind of berry was an important way of the high-value usage. In this paper, a comparative study of extracting effects of acidic ethanol, ethanol and water on Aronia melanocarpa polyphenols was performed. The results showed that acidic ethanol had the highest polyphenols extraction ratio, while the extraction ratio of water was 28.77% of acidic ethanol. The analysis of polyphenols antioxidant activity(DPPH radical removing capability)showed that the water-extracted polyphenols had a higher antioxidant activity than those extracted from alcohol and acidic ethanol. The ratio of total DPPH radical removal capability of acidic ethanol-, ethanol- and water-extracted polyphenols was 100∶76.10∶70.83. In addition, the condensabilities of the three kinds of extractions were compared. When the extractions were evaporated to 10% of original volume, the antioxidant activity was almost not lost. Considering the cost, safety and other factors, water had certain advantages to Aronia melanocarpa polyphenols extraction.
